Zucchini Bread Recipe

Thanks to my neighbor, Jennie, she shared the best zucchini bread recipe I've ever tried. I know you'll love it, too!


  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 tsp. vanilla
  • 2 cups unpeeled, grated zucchini
  • 1 can drained, crushed pineapple
  • 2 cups flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. salt
  • 3/4 tsp. nutmeg
  • 1/4 tsp. baking powder
  • 1 cup pecans (optional)


Beat eggs, oil, sugar, and vanilla.

Stir in remaining ingredients.

Oops...start with a big mixing bowl! Otherwise you'll have to switch mid-way...like me.

Mix well and pour into loaf pan.

Bake in a preheated 350 oven for 1 hr.

Note: You can make these into zucchini bread muffins by putting 1/4 cup of batter into each greased muffin tin, and reduce baking time to about 25 minutes. (There will be enough batter for more than one batch.) Enjoy your zucchini pineapple bread, or try my zucchini pineapple cake recipe for something just a bit different.
