Spinach Strawberry Salad

I created this spinach strawberry salad when I had a container of strawberries that had to be used immediately.  I added feta, chicken, avocado, and a homemade spinach dressing.  It was incredible!

Serves 4


  • Bag fresh baby spinach leaves
  • 1 32 oz container strawberries
  • rotisserie chicken (or a foil packet of salmon would be great too)
  • feta cheese
  • 1 large avocado
  • Optional: chopped up pecans or walnuts, or sliced almonds

Strawberry Dressing:

  • juice of 1 lemon
  • 1 TB apple cider vinegar
  • 3-4 Tablespoons honey
  • 3 strawberries
  • 1.5 tablespoons Dijon mustard
  • 1/4 cup Extra Virgin Olive Oil


Combine dressing ingredients in blender, food processor, or my personal favorite, the Ninja.  Give it a whirl and process until strawberries are liquified.  Taste if you care to.  This was the perfect combination of sweet and tangy for us, but if you desire a sweeter dressing, add more honey.  Set aside.

Assemble the salad with desired amount of spinach leaves, cut up rotisserie chicken or salmon, avocado slices, and sliced strawberries.  Sprinkle with feta and nuts (if using)

Drizzle with salad dressing and serve.

We loved this.  My husband and I really did.  My two year old liked it, and my 7 year old boy did not, but three out of four isn't bad!  I hope you enjoy it, too!
