1 lb roll of Italian sausage
8 lasagna noodles - broken into pieces
28 oz can crushed tomatoes
8 oz can tomato sauce
2 cups fresh torn spinach
1/2 cup ricotta
4 oz fresh mozzarella - cut up
1/4 c. Parmesan
In a large skillet, cook sausage and break up.
Spread noodles on top of sausage. Pour crushed tomatoes and sauce on top of noodles.
Bring to boil. Cover and simmer 25 min.
Top with spinach, blobs of ricotta and pieces of mozzarella.
Turn off heat - cover for 5 minutes til cheese is melted. Top with Parmesan cheese.
It's actually better reheated the next day!
