Parmesan Chicken

  • Boneless, skinless chicken breasts

  • Cream of Chicken soup

  • Sour Cream

  • Ritz Crackers

  • Parmesan Cheese

  • Melted butter

Mix crushed crackers and Parmesan cheese (2/3 crackers to 1/3 cheese). Roll chicken in melted butter, then in cracker mix.

Place in a 9x13 pan. Mix together soup and sour cream (1 can soup to 16 oz sour cream). Pour over top of chicken. Top with remaining cracker mix and drizzle with melted butter.

Cook at 375 for 45 minutes or until chicken is done. Serve with instant mashed potatoes and a bag of frozen steamed veggies for a quick easy meal of delicious comfort food. This is the one chicken recipe that my husband will actually BEG for!

I omitted amounts as this recipe can make a meal for 2 or 20 just as easily... Just use as much of the ingredients as you need for the number you are cooking for. 1 pgk crackers, 1 soup, 1 sour cream, 1 stick butter, 1 cup cheese and 4 chicken breasts will make 4 servings. I suggest you make double what you need because EVERYONE will want leftovers!
