Stuffed Pork Chops, Corn on the Cob, & Mashed Potatoes
The great thing about this 30 minute mega-meal is that you can prepare it a day, or two, ahead of time (except for the potatoes which takes less than 3 minutes to make). Then throw it all on the grill and in less than 30 minutes, dinner is hot and delicious. But the BEST part is…VERY LITTLE clean up~!!!

Prep time: 10 minutes
Cook time: 24 minutes
You will need:
1) 2 lean, 3x6” pork loin (no bone) chops
2) 1 box Great Value chicken stuffing mix
3) 3 cups water
4) 1 stick butter
5) 2 ears, fresh sweet, corn on the cob
6) 1 package Betty Crocker Instant Potatoes
7) ½ cup milk

2 lean, approx 3”x6”, pork loin (no bone) chops
1 box Great Value chicken stuffing
1+1/2 Cups water
¼ cup butter

Preheat gas grill to medium-low heat; or raise grate on charcoal grill to high.
Place water in glass bowl, add butter, place in microwave on HIGH for 2 minutes until almost boiling.
Mix stuffing into water/butter mixture; allow to stand 5 minutes. Fluff with fork.
While stuffing is standing, prepare Pork Chops.

Cut 4 sheets of aluminum foil approximately 12”x14”. Place 2 sheets together (to make double thickness).
Spray foil lightly with a nonstick cooking spray. Lay one pork loin on each, double thick, foil sheet.
Spoon ½ of the stuffing on each pork loin.
Fold aluminum foil in half, which will fold the pork loin in half over the top of the stuffing.
Seal all 3 edges of the foil pocket to seal in stuffed pork chops.

Place on grill for 12 minutes. Flip foil pockets over; poke 4 to 5 small holes in top of foil to allow smoked flavor to enter foil; grill an additional 12 minutes or until pork reaches 170 degrees.
Remove from heat. Open foil on one side. Serve hot.

2 ears of fresh sweet corn, shucked with silk removed
2 tablespoons butter
1 teaspoon salt

Cut 2- 12” sheets of aluminum foil. Generously rub each cob with butter; add salt.
Place each cob onto a sheet of foil, roll up to seal.
Place onto grill over medium-low heat for 20 minutes; turn ¼ turn every 5 minutes.
Serve HOT off of the grill…..DEE-licous~!

1 package Betty Crocker Instant Potatoes
1 ½ water
2 Tbs butter
½ cup milk

Rinse out bowl you made the stuffing in and reuse for mashed potatoes. Microwave water and butter in glass bowl for 2 minutes on HIGH. Stir in instant potatoes, add milk and fluff. Add salt/pepper to taste.
