Mandarin Meatballs Recipe

You want to make this mandarin meatballs recipe!  Believe me.  You do.  It's so easy and my picky kids and not so picky husband were asking for more.  Did I mention that I made up this recipe when looking through my freezer and pantry?  Did I mention that it's totally yum?

Mandarin Meatballs over white rice

Servings: 6-7

Prep Time: 10-15 minutes

Cook Time: 30 minutes

  • 2 pounds of frozen meatballs (I buy a 6 pound bag at Sams Club and save for other recipes)
  • 1 29 oz (large) can of mandarin orange slices in light syrup, reserve this juice
  • 1 colored bell pepper (yellow, orange, or red)
  • 1/2 onion
  • 3 tablespoons of butter

  • 1 cup packed brown sugar
  • 1/2 cup seasoned rice wine vinegar
  • Juice or syrup from the can of mandarin oranges
  • 4 tablespoons cornstarch
  • 2 tablespoons soy sauce

Chop the onion and pepper.  Put it in a large skillet (Chicken fryer size,  Very large and deep) with the butter over medium high heat.

Let it cook and begin to caramelize for a few minutes.  Meanwhile begin making the sauce.

Whisk together all sauce ingredients in a separate bowl.

Add frozen meatballs to the skillet and let them begin to brown a little.  Five minutes or so is sufficient.  Don't worry if they're not warmed through, yet.

Add the mandarin oranges and the sauce.  Cover and reduce heat to low/medium.  Let it simmer for 30 minutes.

Cook some white rice while you wait. Prepare yourself for the praise you'll receive!

Serve over rice with plenty of sauce.  Enjoy, my friends!
