The recipe is on the can of the purple hulled peas, butJennifer from Texas submitted this recipe to me. I wouldn't have ever picked up a can of purple hulled peas, so I'm glad she did.

I was surprised that my 1 year old and five year old boys both genuinely enjoyed this recipe. I didn't expect them to eat it, but I put it in front of them, and they did.

  • 3 cups uncooked white rice
  • 2 cans purple hull peas (found near peas and black eyed peas - you can use black eyed peas for this one, too)
  • 1 pound diced/cubed ham
  • 1 small onion, chopped
  • 2 bell peppers (any color),chopped
  • 2 tablespoon butter
  • Louisiana hot sauce
  • sour cream

Prepare rice according to package directions.

Meanwhile, dice bell peppers and onions and ham (if not already).

Cook the above in butter over medium heat until carmelized.

Drain the liquid from one can of the peas. Add peas, liquid from one can, and ham to vegetables.

Add a couple of dashes of hot sauce. Cook until heated through.

Serve over rice. Top with sour cream and additional hot sauce.

Simple. Delicious.
