Crock Pot Red Beans, Sausage, & Rice

It makes me indescribably happy when I cook something that the entire family devours.  This crock pot red beans, sausage and rice did exactly that.

It was an equally big hit with my husband, my six year old, and my 2 year old.  All three of them asked for seconds!  Perfect!


  • 1 16 oz package dry red beans
  • 7 cups water
  • 1 bell pepper, any color, chopped
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 36 oz box of chicken broth or stock
  • 1 pound smoked sausage, such as Kiolbassa
  • 2 tablespoons Tony's Creole Seasoning
  • 1 box of Zatarains yellow rice


Sort beans to check for foreign objects, then rinse well.

In a crock pot combine all ingredients EXCEPT the yellow rice. This will fit in a five quart crock.

If it's an old style crock, turn it to high, if it's the newer style, turn it to low.  The new crock pots tend to cook a bit hotter than the old style.  Cook for 6-8 hours. 

Prepare yellow rice according to box directions. (25 minutes cook time here, so plan for this)

Ladle red beans-sausage mixture over rice.
