Creamy Beef Penne Bake

This creamy beef penne bake is comfort food at its best.  Be prepared for your family to ask for it over and over.

Serves 4- 6
Prep Time: 30 minutes
Cook Time: 20 minutes

  • 8 oz penne noodles
  • 1/2 pound ground beef
  • 1/2 onion, chopped
  • 1 can fire roasted diced tomatoes
  • 1 teaspoon dried oregano
  • 1 Tablespoon butter
  • 2 garlic cloves, chopped fine
  • 1 Tablespoon flour
  • 1 (12 ounce can) evaporated milk
  • 8 ounces cream cheese, cut into chunks
  • 1 teaspoon salt, divided
  • 1.5 cups shredded mozzarella cheese


Cook noodles according to package directions.  Meanwhile...

Cook the beef and onion.  Add tomatoes, oregano and ½ teaspoon salt. Simmer on low.

In a saucepan, melt butter and sauté garlic. Reduce heat to low and whisk in flour until combined.  Add milk, cream cheese and salt. Stir until thickened.

Combine sauce, meat, and noodles.  Stir.  Pour into a 9X13 casserole dish and top with cheese.

Bake uncovered in a 375° oven for 20 minutes or until hot and bubbly.
