My Grandmother made this cranberry orange relish for Thanksgiving one year an now we make it every year its sooo good and its perfect if you are diabetic or on a special diet. just substitute the sugar for Splenda or your favorite sugar sub.
1 bag of fresh cranberries
1 large orange
1/2 cup of pecans
1 cup sugar or splenda (more if you like it really sweet)
Orange juice if needed
Place all the ingredients in the bowl of a food processor, pulse several times to breakdown the cranberries and incorporate the ingredients; it should still be a bit chunky. Allow the cranberry relish to sit at room temperature for at least 30 minutes, so the flavors can marry.
