Chicken and Broccoli

  • 1 lb boneless skinless chicken breasts

  • 1 large pkg frozen broccoli florets

  • 1 cup shredded cheddar or colby jack

  • 2 cups minute rice cooked in chicken broth

I use slightly frozen chicken breasts and cut them into chunks. Brown in a large skillet. Add broccoli and cook until tender. Some liquid is desirable in the skillet. Add cheese and stir until melted, it will combine with the liquid and make a sauce. Serve over rice.
