Hobo Dinners

Tried the Hobo Dinner last night. Awesome response from my family. Added some bell peppers and carrots to the mix. Very easy and dinner was ready when everyone trickled in after their practices. Just left them in the oven. Never dried out, was nice and juicy first or last serving.

My family couldn't believe this dish, so easy, I exchanged the mushroom soup for chicken and mushroom soup and added some button mushrooms, eating left overs now, not that there was much. Topped it off with broccoli, cauliflower, corn, beans and carrots, and of course crusty bread rolls.

I am a single mother of four beautiful children (10, 4, 4, and 6 weeks) and struggle to come up with quick ideas for dinners. Two of the three bigger kids are somewhat picky eaters, but love it, somehow, when I can disguise stuff they don't like in foods they do. I've used a few of your quick and easy recipes and they are certainly just that...quick AND easy!! It makes for a much less stressful day and evening for myself when I don't have to freak out trying to plan what to make for dinner and then realize I don't have the ingredients on hand! The kids have loved the recipes I've tried and are happy that I'm not spending a couple of hours trying to get dinner ready (it takes me that long with the little one crying to be fed too). They've also eaten foods that before they would not.

Anyway, I am SO GRATEFUL for your website! Thanks for the time and effort you put into "your baby" so I can benefit from it as well!!

No Bake Cookie Tips

I have a great tip when making these (or most any other no bake cookie)...Instead of spooning them into individual cookies, I just dump the whole thing out into a pan lined with wax paper. The size pan you use determines the thickness of the cookie. When they have set, I remove and cut with my pizza cutter.

I love this site!! I am no gourmet chef, and my family will tell you I can not cook anything without explicit instructions.

This site not only gives me pictures, great instructions, but the recipes are practical.

I made the chicken crescents (which were a huge success), brought a leftover to work, now everyone makes this recipe with their own twists to it. The easy sour cream chicken enchiladas, is a once a week meal in our house (I add a can of ro-tel for an extra little flavor).

But truly this website has made my life much simpler. I work full time and have 4 children and everyone in my house is picky eaters.

When I told my daughter I was going to make this for dessert she wasn't sure...but was she surprised! I served it warm out of the oven right after dinner! Everyone loved it. I am a law student with a hectic schedule. And your website really helps me out. I am making the Mexican casserole but I am going to add jalapenos. I am just reading the recipe and it seems great and like it will make enough to last me throughout finals...keep adding recipes!!!!!

Hobo Dinners!

Hi Tiffany,

We had your Hobo dinners for dinner tonight. I made them a little bit differently. I did use the ground beef but mixed it with an egg, a packet of dry Lipton onion soup and a bit of oats before I made the patties. Then, I added red potatoes and green beans. I topped it with some garlic powder and pepper.

Long story short, everyone loved them! I definitely needed to add more salt, which surprised me because usually the dry onion soup is pretty salty stuff. Guess not! But you are right, it was an easy dinner and a very YUMMY dinner with numerous ways to fix it, including chicken!

Ok. I love you website!

I have to admit that when it comes to dinner, I have been failing as a Mom. We are stuck in a horrible rut over here and with the help of your website I feel a change in the wind.

I would like to ask only one thing for myself. When you list your main dish meals, that sound absolutely yummy, can you maybe add a suggestion for a side dish? I know, I know. I'm pathetic. I can't even come up with a side dish ideas. Thanks.

Appetizer cheese ball recipe

I made your appetizer cheese ball recipe for Thanksgiving and put only 1 TBSP of garlic salt in (yours calls for 2 - 3). It essentially ruined the cheese ball - it was so salty, we could hardly eat it. I'm just curious if you meant to put garlic POWDER, not garlic SALT. Did you? I would like to make it again, but I think I'll try the powder instead of salt. I like your website though - lots of good recipe ideas! Thanks!

I'm going to try your recipe for Chicken Bundles which seems simple enough and consists of ingredients that my wife and kids will eat.

I was so worn out with typing in "cheap and easy family meals" in search engines and getting nothing but 20 ingredient recipes! that wasn't easy and definitely not cheap. When I recently came across your site, I was like "FINALLY" its family friendly, and budget friendly. Your website rocks! I am a very, very young mother of five children so I can't afford 20 ingredients to make one meal. I would like to see more Mexican recipes. My husband is also from Mexico and I can't stress how much he dislikes the food I learned to make growing up. It is kind of like stepping into another world. I am not the best cook so to me a Mexican meal has constantly consisted of carne frijoles y arroz con tortillas. So some more easy but tasty ideas would be fantastic. Keep up the great work :)

Hobo Dinners

I am a single mom working full time and not the best cook but I do try and I looked here to get some ideas for quick meals.

I was surprised to see the hobo dinners these are one of our favorites very good and fun too. Just wanted to add that in the summer I love to take my kids camping and we make these hobo dinners and actually cook them by putting them right into the fire for about 45 min to one hour and they turn out really good as well my picky kids actually love these and cooking them on the fire is a blast and one of the funnest meals out camping. Very easy....
