I've made this a million times and each time we go gaga for it. Bring it to a potluck or get together, and just watch it disappear.

Ingredients needed:

  • 2 cans of Pillsbury crescent rolls or Pillsbury Recipe Creations (better)
  • 2 cups of sugar, divided
  • 2 packages of cream cheese (8 oz.ea)
  • 1 stick of butter
  • sprinkle cinnamon

Instructions:

Pre-heat the oven to 350 and bring packages of cream cheese and a stick of butter to room temperature (or heat in microwave for 1 minute at 50% power)

Meanwhile, spray a 9X13 pan with nonstick cooking spray. Press a roll of crescent dough into the bottom of the pan, pinching the seams together. (The Recipe Creations is solid - so no need to pinch together.)

With an electric hand mixer, combine cream cheese with 1 cup of sugar until soft.

Spread the cream cheese mixture over crescent dough with a spatula.

Take the second can of crescents and lay on top. Pinch seams together. Don't worry if everything is not fully covered. The dough may not fully come to the edge.

Next use a fork to mix a stick of butter with 1 cup of sugar. It will be crumbly. Add this crumbly mixture on top of crescent dough (be sure to get the edges.) Sprinkle cinnamon over top.

Bake for 30 minutes, then enjoy your Sopapilla Cheesecake! Your house is going to smell heavenly while this is cooking. I'm just warning you!
