Simple Homemade Chicken Enchilada

Ingredients:

  • 1/2 cup finely chopped onion

  • 2 tsp. chili powder

  • 1 cup salsa

  • 1/4 cup butter

  • 1/4 teaspoon pepper

  • 1/8 teaspoon salt

  • 2 cups sour cream

  • 2 cups chopped cooked chicken

  • 3 cups shredded cheese

  • 10 (8 inch) tortillas


Directions:
1. On the stove sauté onions with butter then add chili powder and salt and pepper, it smells so good!. In the same pan put your temperature on low and add sour cream until it is smooth and then add salsa and your cooked chicken set aside to cool.

2. Spoon about 1/2 cup off center on each tortilla; add shredded cheese and roll up. Place seam side down in a greased 13-in. x 9-in. x 2-in. baking dish, I also put about a cup of salsa in the bottom of the pan.

3. Cover with foil and bake at 350 degrees for 20 minutes. Uncover; sprinkle with remaining cheese and bake uncovered until cheese is melted. Let stand for 10 minutes before serving.

4. I make the chicken mixture the day before then it is a really easy meal after I get off of work to whip up.

I have a recipe for chicken enchiladas that is much more complicated, and takes forever, so thanks for this quicker version!

One question...the first ingredient says 1/2 cup tablespoon of finely chopped onion...I'm assuming it's 1/2 cup?? I'll edit it for you when I hear what the correct amount is.
