Shrimp Carbonara & Penne Pasta

You'll love this shrimp carbonara & penne pasta! Penne pasta bathed in a shrimp and bacon flavored sauce with the tang of Feta or Romano cheese…Oh my~!

Cook: 20 min

4 slices bacon
1 LB frozen, cooked shrimp, peeled, tails removed
1/3 cup whipping cream
2 eggs
1 cup crumbled Feta or grated Romano cheese
½ cup onion, chopped
½ tsp ground peppercorn
2 Tbs butter
1 box penne pasta, cooked and drained
2 tsp parsley

1. Melt butter in 12” skillet. Cut bacon into small pieces, add to butter and stir-fry 5 minutes. Add onion and sauté until onions become transparent. Add shrimp; stir-fry for 3 to 4 minutes. Drain off excess fat. Season with peppercorn.

2. In bowl, lightly whisk whipping cream and eggs. Fold in Feta or Romano cheese. Add to skillet.

3. Turn down the heat and keep tossing in skillet until sauce slightly thickens. Divide pasta into individual plates, spoon carbonara over pasta. Sprinkle with parsley and serve immediately.
