Salsa Pot Roast

by Tessa K.
(Culpeper, Virginia)

Ingredients:

  • 3-4 pound Roast

  • 1 Jar Salsa (I use Old El Paso Medium)

  • 2-3 C white rice (I use quick cook rice)

  • Garlic Powder

  • Onion Powder

Place Roast in Crock Pot. Sprinkle to taste with onion and garlic powder. Pour in jar of salsa, be sure to cover entire roast. Cook 6-8 hours. Turn off crock pot and allow to rest for 30-45 minutes. Add rice around the roast while the roast is resting. The rice will soak up those yummy juices. Sometimes I throw in a can of corn (drained) for a different taste.

My husband seemed to enjoy this meal, but I wasn't too keen about it. It's a great idea though!
