Raisin Coffee Cupcake Recipe

Ingredients for Raisin Coffee Cupcakes:

  • 2 tsp. instant coffee
  • 2 cups hot water
  • 1 1/2 cups brown sugar
  • 1 1/4 cups chopped raisins
  • 2 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1/2 cup apple pie filling
  • 1 cup butter
  • 1 egg
  • 3 1/4 cups plain flour
  • 2 tsp. baking soda

Directions:

1. Preheat oven to 325 degrees F

2. Line cupcake trays with cupcake papers.

3. Dissolve coffee in hot water.

4. Combine brown sugar, chopped raisins, cinnamon, ground cloves, apple, butter, dissolved coffee in a saucepan.

5. Stir over low heat until butter melts. Cool.

6. Add lightly beaten egg and mix well.

7. Add sifted flour and soda and mix well.

8. Spoon into cupcake trays.

9. Bake for 15 minutes or until a skewer inserted in the center of a cupcake comes out clean.
