Pressure Cooker Pot Roast Recipe

Thank you Carrie for submitting this pressure cooker pot roast recipe. I can't wait to try it!

Carrie says, "I too, am very picky on how tender it is, and I go for the kind of tenderness where you can flake the roast apart with a fork and rarely need a knife to cut it."

You Need:

  • Roast - pick your weight and type
  • salt and pepper
  • 1 package of dry onion soup mix, such as Lipton's
  • 4 cups of water

"My approach is to cut the roast in fist or baseball-sized pieces, brown them a little in a skillet with some salt and pepper and then put them in a pressure cooker with a package of onion soup mix and 4 cups of water for45-50 minutes for 2-3 lbs of meat (use the pressure cooker guide for time for a larger or smaller cut - actually I followed the guide the first couple of times and didn't nail it so I bumped up the time about 10-15 minutes until it came out just right).

When it's done I ladle out some of the leftover liquid into ramekins as au jus. It melts in your mouth! You can add the potatoes and carrots halfway through the pressure cooker process."

Now you can enjoy a delicious pressure cooker pot roast in a fraction of the time it would normally take to cook a tender roast.
