It just doesn't get any easier. These pizza quesadillas can be on your table and in your belly in 10 minutes or less. I have to credit my husband with the idea. He made a microwave version without the pizza sauce and loved them. I improved it just a tad with some sauce and a skillet.
Optional: black olives, mushrooms, onion, bell pepper, anything you would put on a pizza can go into a quesadilla.
Lay a tortilla out and cover the entire thing with cheese. Spread a very small amount of sauce on. You don't need but a tiny spoon of it. Add desired toppings to only half. Place in a very lightly buttered skillet that you've warmed up to medium heat.
Wait a minute or so until the tortilla is soft enough to fold over without breaking and cook until lightly brown on the outside of each side. This should be enough to melt the cheese, but if for some reason the skillet has browned the outside and the inside isn't melty yet, pop it in the microwave for 15 seconds. Slice into sections if you desire. You can serve with a dipping sauce such as heated pizza sauce or ranch dressing (we eat everything with ranch dressing in Texas, even our pizza!)
