Pico de Gallo Recipe

pico de gallo recipe, how to make pico de gallo, pico de gallo recipes

My husband, who is originally from Mexico, has his own pico de gallo recipe that is truly wonderful. Lucky for me, he never minds making it if I have the ingredients on hand.

You need

  • 4 roma tomatoes, or 1 ginormous tomato from your garden, chopped
  • finely chopped onion, 1 small, or 1/2 medium, or 1/4 large (onions vary greatly in size - you need equal parts onion and tomato - so measure those chopped tomatoes from above, and now chop that much onion!) I don't normally care for raw onion, but you CAN'T use less, it doesn't taste right!
  • 2 jalapenos, finely chopped, don't de-seed these (add more if you like it HOT)
  • heavy handful of fresh cilantro, chopped

  • juice of 1 lime
  • 1 tsp. salt

Directions:

Here's the hard part, combine all of the above ingredients and stir.

Note: This was only enough for my husband and I to eat with one meal, so you may want to double or triple the recipe for a crowd.

My husband also makes the BEST guacamole with the same ingredients AND avocado, here's his guacamole recipe.
