Mediterranean Shrimp

This recipe has a bit more prep time than some of my recipes, and the ingredients aren't as common as I prefer, but let me assure you that if you take the time to plan this into your dinner rotation, you won't be sorry! It's very good. Serves 4

Ingredients for Mediterranean Shrimp:

  • 1 onion
  • 1/2 cup extra light olive oil
  • 3/4 pound tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 bay leaf
  • 1/2 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/4 cup parsley, chopped
  • 1/2 tsp. hot sesame oil
  • salt and pepper to taste
  • 1 pound shrimp, shelled
  • 1/2 pound feta cheese, crumbled
  • 8 black olives
  • 1/2 lemon

Directions:

Preheat oven to 450 degrees. In a large skillet or wok, saute onion in olive oil over medium-high head until soft. Add tomatoes, garlic, bay leaf, basil, oregano, parsley, sesame oil, salt and pepper. Cook 4-5 minutes.

Remove from heat and mix in uncooked shrimp. Put in 12 by 7 1/2 by 2 inch pan. Crumble feta over top. Arrange olives on top of feta and squeeze lemon over all.

Place in oven for 15 minutes. Serve over white rice.
