Lighter Christmas Eggnog Recipe
I love eggnog!
This is a somewhat lighter Christmas Eggnog recipe, compared to the heavy richer versions. I begin drinking it every year at Thanksgiving and continue through New Year's. It's my favorite! Note: I substituted dark rum for the brandy and bourbon that the recipe calls for, and I loved the subtle flavor! So consider that a viable option, too.
Ingredients: - 1 dozen fresh eggs
- 1 cup sugar
- 1 1/2 cup bourbon or whiskey
- 1/2 cup brandy (if you don't have, use more bourbon)
- 6 cups milk
- 1 1/2 tsp. nutmeg
Directions: Separate eggs. Set aside egg whites.


Put yolks in blender and beat till light yellow. Sprinkle in 1 cup sugar and beat till thick.


Add bourbon and brandy (or rum) to the egg yolk mixture. Chill overnight (or at least 4 hours.)

After chilled, divide mixture into 2 two quart pitchers or put into a gallon pitcher.


Add 6 cups milk to this mixture, or 3 cups per container if divided.

Add nutmeg.


Before you serve, beat egg whites till stiff and fold into eggnog mixture.





I like to sprinkle a bit more nutmeg in my cup right before I drink it.
