Kalua Pig

Ingredients for Kalua Pig:

  • 2 ½ lb boneless pork shoulder roast

  • 1 ½ tsp sea salt

  • Aluminum foil


Score meat on all sides about ¼ inch deep. Rub in sea salt. Wrap tightly in foil, fat side up, and place in smoker (preheated to 300-325 degrees) for 4 - 5 hours, until done. Shred with 2 forks.

The original recipe shows to pour 1-2 tsp liquid smoke on hands and rub into meat after rubbing in salt, wrap tightly in aluminum foil and bake in preheated 500 degree oven for 45 minutes. Reduce heat to 325 and continue baking until done, 2 ½ - 3 hours.

One Hawaiian tradition is to serve kalua pig (which translates “to cook in an underground oven”) with white rice and macaroni salad. The perfect dessert – Tropical Breeze Pie or coconut pie, of course! This also makes great pulled pork sandwiches.
