Hoppin Johns

Ingredients:

  • 1 cup uncooked white rice
  • 2 cans purple hull peas (found near peas and black eyed peas - you can use black eyed peas for this one, too)
  • 1 packet diced/cubed ham
  • 1 small onion
  • 2 bell peppers (any color)
  • 1 tablespoon vegetable oil
  • Louisiana hot sauce
  • sour cream

Prepare rice according to package directions. Meanwhile, dice bell peppers and onions. Cook with vegetable oil over medium heat until crisp. Drain the liquid from one can of the peas. Add peas, liquid from one can, and ham to vegetables. Add a couple of dashes of hot sauce. Cook until heated through.

Serve over rice. Top with sour cream and additional hot sauce.

Simple. Delicious.
