We have a new favorite around our house, and these Hawaiian Chicken Sandwiches are it! The little ones had their coleslaw on the side, but my husband piled it on his sandwich and yum! I looked like a cooking genius, but these were tooooooo easy!
Ingredients for Coleslaw
Cook chicken breasts, drain, and shred with a fork. Add the chicken back to a pan and combine with barbecue sauce. Set on low and let heat through.. (I did all of this in the crock pot - I threw the chicken in at noon on low. I drained, shredded and returned to crock with bbq sauce while I made the coleslaw and grilled the pineapple)
Cut fresh pineapple into rings, or use the canned ones. Grill these in a grill pan on the stove or on a George Foreman or even outside. Just long enough to heat it up and give you those nice grill lines.
Prepare coleslaw by mixing mayonnaise with the other ingredients (minus the cabbage) to make the sauce. Pour over the cabbage and combine. It may seem to dry at first, but it's not. Give it a little time to come together! **I like to make my coleslaw in the morning and refrigerate it until ready to use. The cabbage takes on the flavor better with a little time.
Now briefly warm the buns in the microwave and assemble sandwich starting with a generous helping of barbecue chicken, followed by a pineapple ring and topped with coleslaw.
