Hamburger Soup

I'd like to contribute one of our favorite easy dinners. We call this Hamburger Soup, but actually it's quite good with chicken (including canned), stew meat or no meat at all.

The beauty of this recipe is that you can keep the cans in the pantry for those nights when you need to put something hearty on the table in minutes. No measuring -- just open the cans and heat.

To one pound of browned and drained hamburger meat, add:

  • 1 can Minestrone Soup (like Progresso)

  • 1 15 oz. can Ranch Style Beans

  • 1 10 oz. can diced tomatoes with chilies (like Rotel)

  • 1 14 oz. can of chicken broth

  • 1 15 oz. can mixed veggies (like Veg-all)

  • 1 small can kernel corn


Heat through, serve and enjoy!

Sometimes we substitute lentils for the corn.

You can also ratchet up the heat by selecting the spicy version of Rotel.

I will be keeping the ingredients for this soup on hand. It was a raving success with my husband. I did change it a little bit - used frozen veggies instead of veg-all and used beef broth instead of chicken. Will probably double it next time though! Thanks again for all the quick and easy dinner ideas!

I made this last night, and my husband raved! I knew we would like it, but I didn't expect him to love it! He said, "this is the best soup you've made in a long time...maybe the best ever." Wow!

Thanks so much for sharing! The ingredients don't really sound like anything special, but it comes together in a way that makes it super delicious!
