Grandmas Summer Sausage

My Grandmas summer sausage is SO good. You'll never want to buy the expensive gift sausage in the store again. Here's how to make it. (note: in the pictures you see, we always double this recipe! We like to make a lot and freeze it, then pull out as needed!)Ingredients: - 2 pounds hamburger
- 1/4 tsp. garlic powder
- 1 1/2 tsp. liquid smoke
- 1/4 tsp onion powder
- 1 cup water
- 2 Tbsp. Morton's Tender-Quick
- 1 tsp. crushed red pepper
- 1 1/2 tsp. mustard seed
- coarse ground black pepper (optional)
Directions: Mix all ingredients; knead. If you have a Kitchen-Aid mixer, it works great for this. Make into 3 rolls, about 10-12 inches long. If desired, roll in coarsely ground black pepper (pepper a piece of foil and press meat roll into the pepper, rolling around.) Tightly wrap in Saran Wrap. Refrigerate 24 hours; unwrap. Bake at 350 for 20 minutes, then at 300 for 1 1/2 hours. Wrap in plastic wrap and refrigerate. These also freeze well and are great for holiday gift giving.
