Grandmas Summer Sausage

summer sausage recipe, how to make summer sausage

My Grandmas summer sausage is SO good. You'll never want to buy the expensive gift sausage in the store again. Here's how to make it. (note: in the pictures you see, we always double this recipe! We like to make a lot and freeze it, then pull out as needed!)

Ingredients:

  • 2 pounds hamburger
  • 1/4 tsp. garlic powder
  • 1 1/2 tsp. liquid smoke
  • 1/4 tsp onion powder
  • 1 cup water
  • 2 Tbsp. Morton's Tender-Quick
  • 1 tsp. crushed red pepper
  • 1 1/2 tsp. mustard seed
  • coarse ground black pepper (optional)

Directions:

Mix all ingredients; knead. If you have a Kitchen-Aid mixer, it

works great for this. Make into 3 rolls, about 10-12 inches

long. If desired, roll in coarsely ground black pepper (pepper

a piece of foil and press meat roll into the pepper, rolling

around.) Tightly wrap in Saran Wrap. Refrigerate 24 hours;

unwrap. Bake at 350 for 20 minutes, then at 300 for 1 1/2

hours. Wrap in plastic wrap and refrigerate. These also freeze

well and are great for holiday gift giving.
