Goulash

Goulash was a forgotten meal...that my mom used to make, and then one day when I had a family of my own, I remembered this super easy and quick dinner. There really aren't any rules, so open up your cabinet or pantry and get cooking.

A funny story about my mom making goulash, when we were kids and used to ask my mom what was for supper, she'd reply "pig slop", so I can't help but to smile when I think of it.

Suggested Ingredients

  • 1 1/2 pound ground beef/hamburger meat
  • 1 can Ranch Style beans
  • 1 can Mexican or regular corn
  • 1 can Spanish rice or leftover homemade Spanish rice or (I prefer) cooked macaroni noodles
  • Garlic salt and black pepper to taste
  • 1/4 to 1/2 pound grated cheese
  • Optional:

  • 1/2 bell pepper, chopped
  • 1/2 onion, chopped
  • 1 small can mushroom pieces
  • 1 small can chopped green chilies

Directions

Brown beef (and chopped onion and pepper if using)and drain well. Add beans, corn, and rice/noodles (and any of the optional ingredients). Stir well and heat through. Sprinklecheese on top. Turn off burner and cover. Let stand 10 to 15 minutes before serving.

Mom used to serve this with bread and butter or brown and serve rolls. It may not look like anything special, but it tastes good and is an easy dinner idea!
