French Toast Casserole Recipe

This French Toast Casserole recipe is a delicious way to serve breakfast to a crowd.

Ingredients for casserole:

  • 1 loaf of French bread, sliced into 1 inch slices
  • 10 large eggs
  • 2 cups whipping cream
  • 2 cups milk
  • 2 Tablespoons sugar
  • 2 teaspoons of vanilla extract (I love Mexican vanilla)
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground cinnamon

Ingredients for topping

  • 1 cup butter
  • 1 cup brown sugar
  • 1 1/2 cups chopped pecans
  • 2 Tablespoons light corn syrup
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon

Directions:

Arrange sliced bread in an 11" X 17" baking pan that has been coated with nonstick cooking spray. Set aside. Combine remaining casserole ingredients and pour over bread, making sure all bread is coated. Cover and refrigerate overnight.

In the morning

Combine topping ingredients in a saucepan and heat until butter is melted. Pour over bread mixture and bake 45 minutes (or until set) in a preheated 350 oven. May be drizzled with syrup and dusted with powdered sugar for extra effect!
