Easy Italian Twist 3 Part Dinner

This Easy Italian Twist is a 3 Part Dinner.

BREAD CUPS

  • 6-8 pieces of white bread(crust removed and saved)

  • 2 Roma Tomatoes

  • A couple fresh Basil leaves

  • Cream Cheese

  • Fresh Mozzarella cheese

  • Salt and Pepper

  • E.V.O.O.(extra virgin olive oil)


Remove crust from bread and set aside. Roll bread squares into thin slices. Brush with E.V.O.O.

Place each piece of bread into a muffin tin, pinch sides.

Bake @ 350 for 10-15 min. Remove and cool. Place 1 tsp cream cheese in each bread cup, put a sliver of mozzarella, a sliver of tomato.

Chop Basil and sprinkle on top. Take E.V.O.O. and drizzle over top.


PASTA
  • 1 box Penne Pasta

  • 2 cups Broccoli Florets

  • 2 Garlic cloves(chopped)

  • 1 tsp crushed red pepper

  • Parmesan cheese(to your tasting)

  • E.V.O.O. (1/3 cup)

  • Red wine vinegar(to your tasting)

  • Salt and Pepper


Cook the pasta as per package directions.

Place 1/3 cup E.V.O.O. in frying pan with 1 tsp crushed red pepper. Mash garlic cloves to infuse flavor in the hot E.V.O.O. for 10 min.

Remove garlic. Sautee broccoli for 10 min. Throw in cooked pasta with 2 tbs. of the red wine vinegar. Toss and plate.


PARMESAN CRUSTED PORK CUTLETS
  • 4-6 pork cutlets

  • Bread crumbs

  • Parmesan cheese

  • 2 Eggs

  • Flour

  • Salt and Pepper

  • Vegetable Oil


Using food processor or blender, blend the left over bread crusts from earlier with 1/4 cup parmesan cheese.

Bread the pork cutlets in the mixture and fry about 4 min each side on medium high heat. Plate up and enjoy!:)
