Easy Empanadas

Ingredients:

  • 1 cup chicken, beef or pork

  • 1/2 block cream cheese

  • 1/2 packet Taco seasoning

  • Green Chili Sauce (This comes in a jar sometimes called Tomatillo sauce)

  • Shredded cheddar cheese

  • 2 refrigerated pie crusts


I use leftover chicken or roast beef or pork - A little goes a long way....Add 1/2 package taco seasoning to the meat and warm up so it's easy to blend but not hot.

Add 1/2 to 1 full block of cream cheese to meat.
Stir in green chili sauce and shredded cheese.

Roll out pie crust and cut into small rounds (I use a tall drinking glass)

Slightly dampen the pie crust with water - spoon a small amount of meat onto the rounds and fold into half moons - press fork around edges to close.

Deep fry until golden brown.

Makes 25-30 depending on how you roll out the dough (You want it to be thin but not where the meat will poke through when folded.
