Easy Chicken and Rice Teriyaki Dinner for 2

This is a Great fast cooking meal under $10.00 and tastes great in about 15 minutes~



For the Rice

  • 1 ¾ cup water

  • 1 slab of butter

  • 1 Cup Jasmine Rice

Bring water and butter to a boil add in rice and stir, put burner on low and let simmer for 15 minutes.

Now while your Rice is finishing…..In a small frying pan…….
1 Boneless Chicken Breast cut in strips (I just add a little oil and water and cook thoroughly)
Then add Kikkoman Teriyaki Baste and Glaze and dilute it with water to get the right thickness for the sauce. I warm my chicken in the sauce.

Steam your choice of veggies.
  • ½ cup frozen small peas

  • ½ cup sliced carrots

  • ½ cup sliced celery

You can easily add whatever other veggies you may have on hand in your refrigerator~

Now dish out the rice on a plate.....and then smother with your chicken and veggies and top with toasted slivered almonds*.

*Added note from Rhonda - Also what really sets this dish OFF that I forgot to put in the recipe is I use:
"Toasted slivered almonds" I get the raw ones (less expensive) and then I lightly toast them under the broiler and add to the dish....If you can TRY and put this on the recipe it is WHAT MAKES THIS DISH SO GREAT and not just ordinary!

Yum for dinner

I made this tonight. My four year old who is picky over alot of stuff. Barely finishes anything put infront of her even when it comes to dessert. She ate all the veggies, rice an chicken even asked for more. Will be making this again and again. I did add fresh ginger and toasted sesame seeds. I must say amazing.

It was great. I changed it a bit, using carrots, cellery, onions and yellow pepper with the chicken. I put it over a package of Select Brown & Wild rice with Quinoa that microwaves in 90 seconds within it's own package.

The easiest and quickest meal I have ever fixed and tasted great.

I have had a few friends email me and one reminded me I used Pork at one time in this dish.

You actually can use Chicken, Pork or Beef whatever you fancy.

Know that you can easily add whatever vegies you like, sugar snap peas are wow in this dish along with water chestnuts or even fresh sprouts.

Also for a quick side you can buy at any grocery store Chinese BBQ Pork has the sesame seeds and hot mustard already in the package - slice this up on the side or even serve the sugar snap peas on the side.
