Easy Chalupas

chalupas, tostadas, easy dinner idea

Easy Chalupas are one of my family's favorite quick fix meals. You may have your own way to fix tostadas, but as I've said before, sometimes you just need the quick dinner idea (since you're brain dead from a long day at work).

Ingredients:

  • corn tortillas or tostada shells - depending how big of hurry you're in
  • refried beans in a can - I spice mine up a bit with garlic powder and a touch of cumin
  • 1 pound of ground meat beef cooked with onion and garlic and taco seasoning (OPTIONAL) *Most of the time we make our chalupas meatless
  • chopped tomatoes
  • shredded lettuce (baby spinach leaves are also good)
  • shredded cheese (or we love Queso Fresco from the Mexican section)
  • Any other topping you desire - guacamole, avacado, sour cream, chopped onion, etc.

Directions:

I prefer to make my own tostadas out of pre-made corn tortillas. It doesn't take long, and I think tastes much better, but if you're in a big hurry just use the pre-made tostadas. I fry my tortillas in hot canola oil in a large frying pan for just a few seconds on each side, until slightly brown and then drain on paper towels.

Heat your refried beans and season to your taste.

Top your tostadas with beans, meat, and any other toppings you've prepared! That's it!

My family loves them.
