Easter Cake Recipe - Sherbet Cake

This Easter cake recipe is made from sherbet. It's beautiful and colorful, and a perfect treat for an Easter Dessert. A big thanks to my friend Cathy for sharing her recipe.

Ingredients:

  • 1/2 gallon lime sherbet
  • 1/2 gallon orange sherbet
  • 1/2 gallon pineapple sherbet
  • 1/2 gallon vanilla ice cream
  • 1 pint whipping cream

Directions:
Using an ice cream scoop, arrange sherbet in a tube pan, layering all flavors until pan is filled. Place pan in freezer until sherbet is frozen again.

Partially melt vanilla ice cream and drizzle over frozen sherbet to fill in holes. Again return pan to freezer until ingredients are frozen.

Whip cream with an electric mixer until stiff (Do NOT add sugar or vanilla extract.) Invert cake onto serving platter and frost with whipped cream. Keep cake frozen until serving time.
