Crock Pot Dijon Pork Chops

Pork chops with tasty mini potatoes in a dijon paprika sauce.  My husband really really enjoyed this.  I'll be making this again.

Ingredients:

  • 4 pork chops
  • 1 1/2 pounds baby red, purple, white potatoes
  • 1 can cream of chicken
  • 1/4 cup cooking sherry
  • 1/4 cup dijon mustard
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 
1/4 teaspoon black pepper
  • 2 tablespoons butter
  • Drizzle of olive oil

Directions:

Heat butter in a skillet over high heat.  Salt and pepper pork chops, then sear each side in the pan.

Wash baby potatoes and place in the bottom of an oval crock pot.

In a bowl combine soup, dijon, sherry, pepper, paprika, thyme, and garlic powder, Whisk to combine well and spread this evenly over potatoes.  Add pork chops and pan dripping to the top of the potatoes.  Cover and place crock pot on high for 4 hours.(or low for 8 hours)

Serve pork chops and potatoes with a generous helping of sauce from the crock pot.
