Curried Shrimp Salad Pitas

Curried Shrimp Salad Pitas

This curried shrimp salad pitas is a quick and easy dish that's also a great hot weather meal.

Ingredients:

  • 1, 14 oz bag precooked frozen shrimp

  • 1/2 chopped bell peppers

  • 1/2 chopped sweet onions (i.e.; vidalia or maylasian)

  • 1/4 cup finely chopped celery

  • 1/2 cup mayonnaise

  • 1 tsp curry powder (add less if desired)

  • 2 whole pita breads

1. Place shrimp in colander and rinse with cold water to thaw. Allow to drain. Remove tails. Chop shrimp into large chunks.

2. Add vegetables, mayonnaise, and curry powder. Stir until completely mixed. Refrigerate at least 10 to 15 minutes to allow flavors to mingle. Best if refrigerated overnight.

3. Cut each pita bread in half; gently open at cut side. Stuff with Shrimp Salad. Serve with a side salad. May also serve the Shrimp Salad over a bed of lettuce or pasta.

Servings: 2
Yield: 4 Pita halves
Preparation time: 15 minutes
