Make these crock pot Italian beef sandwiches and get ready for the compliments.
These were truly fantastic and equally well received by my husband, my 6 year old, and my 2 year old. Everybody chowed down!
Place roast in the crock pot with onions, garlic, Italian seasoning, pepper, water, 1/2 + jar of peppers with juice (remove stems either now or before serving).
Cover and cook on low for 6 hours.
Remove meat from crock. Add mushroom gravy mix to the crock pot and whisk it to combine well.
Cut meat into chunks or shred (it will be easy to do this.) Return the shredded meat to the crock pot and mix it well into the juice. Leave it cooking for approximately 1 more hour.
Serve meat, peppers, and onions on warmed rolls and immediately top with cheese to melt. On the side, dip some of the au jus from the crock pot and place in a small dipping bowl. Dip your sandwich in it! YUM
If you really want to go all out, lightly butter the rolls stuff with meat/onion/pepper mixture and cheese, wrap in foil and place in a preheated 325 degree F oven for 10-12 minutes.
