Crock Pot Beef Fajitas

Ingredients for Crock Pot Beef Fajitas:

  • Rub a 3-4 lb. roast with chili powder (both sides)
  • 1 chopped onion
  • 1 bell pepper, chopped
  • 2 cups uncooked red beans
  • 2 cans Rotel
  • 1 can Cream of Mushroom Soup
  • l can chopped green chilies
  • 1/2 tsp. oregano
  • 1.5 Tablespoons salt
  • 1 cup water

Directions:

Place all ingredients in order in the bottom of a crock pot.

Cook on medium to high for approximately 8 hours or until beans

are cooked. DO NOT STIR while cooking. Eat with tortillas,

cheese, sour cream, guacamole, etc.
