Crispy Potato Slices

Crispy on the outside, soft & fluffy on the inside, these slices are perfect drizzled in vinegar & sea salt.

Ingredients:
2 large cooking potatoes, sliced into 3mm wide slices
4 tablespoons sunflower oil
Tablespoon balsamic vinegar
Teaspoon salt & pepper

In a frying pan, heat the oil on high for about 5 minutes. Then in groups of 10, add the slices carefully into the oil. They will bubble and fizz as they hit the oil. After 2 minutes, turn each slice over, making sure they don’t burn. After another 2-3 minutes, just as they start to brown, remove and place on a wire rack over a plate to drip dry.

Cook all the batches of potato in this way until all of them are done. Add oil as needed, it will evaporate.

Next, we coated them in the vinegar and popped into our built in gas single oven for 5 minutes to crisp up. Remove, season with salt & pepper and serve.
