This crispy chicken summer salad with creamy poppy seed dressing is a perfect lunch or a delicious supper. The combination of flavors can only be described as divine I can't tell you which of the elements I like the best, but I can tell you that you just have to try it...and soon!
My friend Kim used to frequently make this salad, but she used mandarin oranges and bottled poppy seed dressing. I thought it was wonderful and decided to have it for dinner this week. I thought I had mandarin oranges in the pantry, and I asked my husband to stop by the local grocery store to pick up some dressing. You guessed it. I didn't have the oranges, and the store doesn't carry that kind of dressing. No problem, because I improvised. If I do say so myself, this was even better than the original. Enough dialogue, let's get down to the recipe.
Assemble desired amount of salad greens on plates.
Separate 2 pieces of chicken per salad and cut chicken strips into bite sized pieces. You could use less, but we were eating this for supper, and my husband doesn't like a wimpy salad.
Add 2 sliced strawberries per salad.
Divide chopped pecans equally and throw those on, as well.
Take an avocado and cut into 8 pieces. Divide equally per plate.
Now we're ready for the crowning glory - this very simple poppy seed dressing.
Combine all ingredients in a bowl. Use a whisk to mix well.
Divide the dressing equally for all plates. This turned out so much better than the bottled dressing, and it is crazy how simple it was to make. See if I buy bottled dressing again.
