Cream Pie, variations of coconut, banana cream, or chocolate
Why don't more people make these? It would be a shame to let this recipe disappear. I'm all for keeping delicious desserts alive and well. Here is Mom's recipe for a basic cream pie and see variations below for coconut, banana cream, and chocolate. Ingredients:- 1 cup of sugar
- 1/2 cup of flour OR 1/4 cup cornstarch
- 1/4 tsp. salt
- 3 cups milk
- 4 eggs
- 3 Tbsp. margarine
- 1 1/2 tsp vanilla
- 1 9 inch baked pastry shell
and this Pie Meringue Recipe
Instructions:For filling, in a medium saucepan combine sugar, flour or cornstarch, and salt; gradually stir in milk. Cook and stir over medium heat until thickened and bubbly. Remove from heat. Separate egg yolk from whites-set aside for meringue. Beat egg yolk slightly. Gradually stir 1 cup of the hot mixture into yolks. Return egg mixture to saucepan; bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in margarine and vanilla. Pour hot filling into baked pastry shell. Spread meringue over hot filling; seal to edge to prevent shrinkage. Bake in a 350 oven for 12-15 minutes or until golden. Cool, cover and refrigerate. Coconut Cream Pie variation: Prepare cream pie as shown, except stir in 1 cup flaked coconut along with the vanilla. Sprinkle 1/3 cup flaked coconut over meringue and bake. Chocolate Cream Pie variation: Prepare cream pie as shown, except increase sugar to 1 1/4 cups. Chop 3 squares (3 oz) of unsweetened chocolate; add to filling along with milk. Continue as directed. Banana Cream Pie variation: Prepare cream pie as shown, except slice 3 bananas into bottom of baked pastry shell. Pour the filling over bananas. Continue as directed.
