Corn Dog Baked Bean Casserole



Ingredients:

2 cans baked beans
2 packages hot dogs
2 packages Jiffy corn bread mix
2/3 cup milk
2 eggs

Directions:

Pour extra juice off beans. Cut hot dogs into bite size pieces and mix with baked beans. Pour into cake pan. Mix corn bread according to package directions and pour over top of beans. Bake according to corn bread directions. May have to add a few more minutes bake time.

The casserole appeared to be cooked at the cornbread kit cooking time, but it was raw inside. The cornbread kit says to cook at 425 for 20 minutes. I did that and then lowered the temp to 350 and continued cooking another 20 minutes. It was done then. Next time I would probably cook at 375 for 35 minutes and check to see if that worked.

My husband also mentioned that he would like less cornbread, so we would use only 1 package of cornbread mix instead of two. That said, the entire family ate it! My boys love hot dogs, baked beans, and corn bread independently, so it stands to reason if you like those things, you'll enjoy this casserole.
