Chicken Tortilla Crock pot Soup

AKA Chicken Taco Soup

Try this Chicken Taco Soup recipe. It's so easy that you don't even need to thaw the chicken breasts for this soup. In fact the only thing that could make this any easier is an electric can opener.

Ingredients for Chicken Taco Soup

  • 1 can black beans, not drained
  • 2 cans pinto or ranch style beans, not drained
  • 2 cans Ro-Tel (diced tomatoes with green chilies), not drained
  • 1 can hominy, not drained
  • 1 can corn, not drained
  • 1 c. salsa
  • 4 frozen chicken breasts

Combine the first 5 ingredients in crock pot. Place frozen chicken breasts on top. Cook on low for 6-7 hours. Remove chicken breasts to plate, shred into bite-size pieces and place back in crock pot. Serve in bowls with shredded cheese and tortilla chips.

My sister made this (thanks for the picture!) and her family LOVED it!! She said it's now one of her favorite meals. Top of Chicken Taco Soup
