Chicken Fajitas Recipe
Do you need a chicken fajitas recipe for your next get together? This is my husbands original recipe. He's an amazing cook and originally from Mexico, so he KNOWS Mexican food. I recommend serving this chicken fajita recipe with his Spanish rice,
easy refried beans,
and guacamole. (Those recipes coming soon!)
Chicken fajita marinade
Ingredients needed for the chicken fajita marinade:1/2 cup olive oil 1 fresh squeezed lime or 2 Tbsp of lime juice concentrate 2 Bay leaves 2 tsp. garlic powder or minced garlic Salt and pepper to taste (I like Lawry's seasoning salt) optional add a little chicken fajita seasoning, too
Other ingredients needed
2 lb. boneless chicken breast1 green bell pepper (optional add a red one too!) 1 lg. onion 1 lg. tomato De-vein and de-seed the bell pepper, slice it along with the onion and tomato. Set aside. Cut chicken in long strips about 1/2 inch wide. Place in gallon ziploc bag or large bowl with the ingredients for chicken fajita marinade. Refrigerate and marinate for at least 30 minutes...even better if it marinates all day. Discard marinade. In a large skillet, saute chicken. When it's at least half cooked, add onion, bell pepper, and tomato. It's important to wait until the chicken is mostly cooked, because otherwise the vegetables will cook down to nothing. If you'd like to cook this outside on the grill, go ahead! Use a cast iron or hard anodized skillet that can withstand the heat!

Serve on hot flour tortillas with your choice of guacamole, sour cream, cheese, and pico de gallo.
Optional Version-Spicy Chicken Fajitas
For a spicy chicken fajitas recipe, follow all of the above instructions, but add 1 large jalepeno pepper sliced lengthwise including seeds and all along with the bell pepper, onion, and tomato.
