Chicken and Stuffing

Thanks Stacy for submitting this chicken and stuffing casserole recipe. My boys loved it.

Ingredients Needed:

  • 2 Boneless skinless chicken breasts

  • 1 box Stove Top Stuffing

  • Sliced Mozzarella cheese

  • 2 cans cream of chicken soup

  • 1 can corn

  • chicken broth

Instructions:

  1. Cut chicken into small pieces




  2. Cook Stove top as directed(use chicken broth instead of water)



  3. Mix cut chicken pieces,soups,and corn(drained)into baking dish.



  4. Cover with Mozzarella cheese slices (note from Tiffany - all I had was string cheese, so I used that)



  5. Spread stuffing on top of cheese



  6. Cook in 350 degree oven for 40 minutes.

This was really good! I had read a previous comment where they added chopped onion for more flavor. That sounded really tasty but I was too lazy to chop the onion so I mixed in half a cup of french fried onions lol. Yummy!

This was simple and easy. Everyone love it and had seconds. I cut the chicken into bite size (1/4 to 1/2 inch). This took a little longer but everything was cooked to perfection. THANK YOU !

Make sure the chicken is small enough

I think the problem with those who are getting raw chicken is the pieces are too large. I just made this and mine turned out great. Coincidentally, the exact same recipe was listed on the side of my box of stuffing and they specified that the chicken has to be cut into 1 inch pieces. So when it says, small pieces, they really mean SMALL pieces.

Made this dish last night and it was delicious. My kids and husband loved it. I cooked it at 350 degrees for 45 minutes and it worked well. Chicken was cooked all the way. Thanks for the recipe. Will try another one tonight.

I made this dish for dinner tonight. Based on the comments, I baked it at 375 for 45 mins. The chicken on the outside of the baking dish was thoroughly cooked, but in the middle was still way undercooked. I put it back in the oven for another half hour and it did the trick. Tasty!

i just tried this and chicken was also raw. i would suggest cooking at 375 for 40-45 mins or 350 for 50-55 mins. i added some chopped onion for more flavor but otherwise i great easy recipe

Sorry your chicken was raw, I cut mine into small pieces, followed the recipe per Stacy's instructions, and mine was perfect. Any time I cook a reader submitted recipe, I adjust it if I find any problems and correct the recipe or add notes regarding my experience, but I didn't on this one. Better luck to you next time.

raw chicken!!!

I was so excited to make this recipe...I followed all the directions and after cooking it for the time stated...the chicken was RAW!!! I put it back in the oven for 20 more minutes and it was still raw!! HORRIBLE recipe!!!
