Chicken and Rice Soup
It's not difficult to make a delicious homemade chicken and rice soup! It's so good, you may never buy the canned soup again. Okay, never say never. Ingredients: - 1 cup chopped onions
- 1 cup sliced celery
- 1 cup sliced carrots
- 1/4 cup chopped fresh parsley
- 1/2 tsp black pepper
- 1/2 tsp. thyme
- 1/2 tsp. basil
- 1 bay leaf
- 3 qt. chicken broth (can make this with water and concentrated chicken soup base)
- 1 cup uncooked white rice
- 3/4 lb. raw chicken, cut in cubes
- 2 Tbs. fresh lime juice
Directions: Combine onions, celery carrots, parsley, pepper, thyme, basil, bay leaf, and chicken broth in Dutch oven. Bring to a boil; stir once or twice. Simmer uncovered 20 minutes. Add chicken cubes and rice and simmer 10 minutes or until cooked. Remove bay leaf. Stir in lime juice just before serving. YUMMY!
