Chicken and Rice Soup

It's not difficult to make a delicious homemade chicken and rice soup! It's so good, you may never buy the canned soup again. Okay, never say never.

Ingredients:

  • 1 cup chopped onions
  • 1 cup sliced celery
  • 1 cup sliced carrots
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp black pepper
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1 bay leaf
  • 3 qt. chicken broth (can make this with water and concentrated chicken soup base)
  • 1 cup uncooked white rice
  • 3/4 lb. raw chicken, cut in cubes
  • 2 Tbs. fresh lime juice

Directions:

Combine onions, celery carrots, parsley, pepper, thyme, basil,

bay leaf, and chicken broth in Dutch oven. Bring to a boil;

stir once or twice. Simmer uncovered 20 minutes. Add chicken

cubes and rice and simmer 10 minutes or until cooked. Remove

bay leaf. Stir in lime juice just before serving.
