Best Potato Salad Recipe

This is my best potato salad recipe! I made potato salad while working at small town restaurants for over ten years, and everyone loved it. As a side note, at the restaurant I always made it out of extra baked potatoes. You can boil your potatoes, bake them, or cook them any way you see fit for this salad. If you bake them, it's best to do it the day before and put them in the refrigerator to cool.

Approximate servings: 15

Ingredients:

  • 10 medium potatoes, cooked, and peeled
  • 2+ cups of real mayonnaise, not Miracle Whip!
  • 6 boiled eggs, cut up small or mashed
  • 1 tablespoon of mustard
  • 2 tablespoons dill relish
  • 2 tablespoons sweet relish
  • 1 tablespoon of sugar
  • salt and pepper to taste, be generous

Directions:

After peeling the potatoes, cut them into small pieces - half to 1 inch sized.

Combine with all other ingredients in a large bowl. Mix very thoroughly.

You don't want it to taste bland, so try it and adjust salt and pepper to your liking. You can also add a bit more sugar if you choose. I don't like my potato salad sweet, so about a tablespoon is perfect for us, but you might prefer more. Either way, this baked potato salad recipe will get you on the way to super delicious potato salad. I can promise you that you'll never buy it again after you make your own!

This will keep for several days in the fridge - enjoy!
