We love this beef quesadilla recipe that my friend Teri from Granna's Kitchen shared with me. I've made it several times already! Keep in mind that I ALWAYS have cooked ground beef with onion waiting in my freezer.
If using frozen precooked meat, thaw and warm in skillet. Otherwise cook, drain and season your meat.
Add in a can of refried beans and mix well while warming.
Heat another small skillet over medium heat. Prepare tortilla with bean/beef mixture and cheese; fold in half.
(I like to put a tiny bit of butter in the skillet, but it's not necessary.) Then brown tortilla half, flip over and brown other half.
Delish and easy!
