Appetizer Grilled Shrimp

This appetizer grilled shrimp recipe is awesome! It's light, it's fast, it can be a meal, and best of all, it tastes grand! I'm sure there are many appetizer shrimp recipes to choose from, but this barbecue shrimp recipe is my husband's original. It's tasty and really easy whether you choose it for an appetizer or main course.

You need:

  • 2 pounds of raw shrimp, peeled (do it yourself or buy it that way) We like medium to large sized for this recipe
  • 1 tsp lemon pepper
  • 1 Tbsp minced garlic
  • 1/2 stick butter
  • 1/2 onion (sliced or chopped)
  • 2 Tbsp barbecue sauce
  • 1 Tbsp Lawry's seasoning salt
  • Foil

Instructions:

  1. Take 2 pieces of foil approximately 18 inches each and form and form a cross for your grilling packet.
  2. Put your peeled raw shrimp on bottom. If you want to de-vein the shrimp, take a sharp knife and cut along the "outside" of the shrimp, butterflying them and removing the vein at the same time.
  3. Add all other ingredients inside the packet on top of shrimp. The onion is very important for flavor, so even if you're like me and don't care for onion, put it in the shrimp.
  4. Fold foil up tightly from both directions to form a foil packet. Put outside on the grill-medium heat if you're using a gas grill. With a charcoal grill, put it on coals with no flames. If you don't have an outside grill, no worries! 350 in the oven.

Packet takes approximately 20-25 minutes to cook. Take it out and serve!

*Variation* Hubby loves to add a sliced fresh jalapeno in the packet, and I concur, it adds a kick!
