West Texas Cornbread

West Texas Cornbread is a twist on your classic cornbread recipe. You may never go back to plain, though!

Ingredients:

  • 2 eggs
  • 1 cup buttermilk
  • 1 cup creamed corn
  • 2/3 cup vegetable oil
  • 1 1/2 cup corn meal
  • 3 tsp. baking powder
  • 1 Tbs. salt
  • 1 4 oz. can green chilies (chopped)
  • 1 cup grated cheddar cheese

Directions:

Mix all ingredients in order given (except cheese). Pour half

of the mixture into hot, well greased iron skillet. Sprinkle

half of the cheese over the batter. Add remaining corn meal

mixture and top with the rest of the cheese. Bake 350 degrees

in preheated oven for 45 minutes or until done.
